The Caponata of eggplant is one of the most representative dish of the Sicilian cuisine. It is ideal for all the occasions, it can be used as an appetizer or the main course. The Caponata Rinascita holds the heritage, the flavours and the odours of a unique land. It is made with eggplants and vegetables from our territory. Once fried, the eggplants are mixed with olives, capers, our tomato Siccagno sauce and our “Astrattu”. Everything is then simmered with sweet and sour, made with wine vinegar and sugar, in such a way that the caponata is a real riot of flavours.
